This is your deli-type cold macaroni
salad, only better. Get to the deli early enough in the morning
and you can see them filling the trays from industrial-sized commercial
containers manufactured who knows where. This one is easy to make
and o-so-tasty.
The ingredients are those usually to be found at home: elbow
macaroni and something to cook them in, vinegar, mustard, sugar, salt,
pepper, a cup each of celery and bell pepper (any color), 1/2 a cup of
chopped onion, and 1 1/2 cups of real mayonaise (not pictured).
Start the macaroni cooking in a pot of water with a little salt.
Don't undercook as the salad will be served cold and slightly tough
elbows will taste tougher.
While the macaroni cooks, start making the sauce with the mayo.
Add about 4 tablespoons of vinegar.
Two about tablespoons of mustard.
A couple teaspoons each of sugar and salt. Guess which one this is...
Ground black pepper (and a little cayenne).
Mix it up!
Chop the celery...and the peppers...and the onions (not pictured but you get the idea), and put them in the bowl.
The macaroni should be done by now, so drain and rinse it well and dump into the mixture.
Mix it up!
Refrigerate...and that's all.
